Baked Fish Tacos With Avocado
Ingredients:
1 tbsp avocado oil
2 tsp no salt added Mexican style seasoning blend
½ tsp salt
1 pound white fish such as cod, haddock, or mahi mahi
1 avocado
½ pico de gallo
8 corn tortillas
Directions:
Step 1
Preheat oven to 400℉. Coat a large-rimmed baking sheet with cooking spray.
Step 2
Stir oil, seasoning blend, and salt together in a medium bowl. Add fish and toss to coat. Transfer to the prepared baking sheet and bake until the fish flakes easily, about 10 minutes, depending on thickness.
Step 3
To assemble tacos, place 1 or 2 pieces of fish, 2 slices of avocado, and 1 tbsp of pico de gallo in each tortilla
Step 4
ENJOY!
Keep in mind that if you are a Texan most of the ingredients can come ready-made from your local HEB. Fresh corn tortillas, premade pico de gallo, avocado, and seasoning can be easily purchased. However, be sure to follow the instructions when it comes to the seasonings. Too much salt in your diet could raise your blood pressure. This is counterproductive to ensuring a healthy heart.
